If Quebec is reputedly just maple syrup and polite hockey players, Distillerie Mitis will rip that assumption from the chin. It boldly claims it can outdo the provinceâs whole maple reputation in a single spirit.
Set in Mont-Jo, it turns the Mitis River itself into liquid poetry, although most of the magic comes from its obsessive precision, a mix of pine-tips, science, and winter-barrel aging.
They churn a pine-tipped gin called Mugo â just when you think pineâs for timber, it becomes aftertaste; their rum, Rhum Nordique, is a coastal shot, and Acerum is rum laced with maple.
They even team up with Entaille, a local maple producer, for a limited edition that makes your tongue feel like itâs in a Canadian high-school gym.
Tourists get a decent excuse to get drunk, learn a few technicalities, and taste the craftsmanship â just ask the distillery if maple-flavoured rum still feels like a gimmick.
